SWEET POTATO ROLLS

Sweet potato rolls

- 1 cup warm water
- 2 packages active dry yeast
- 2 sweet potatoes cooked and mashed
- 1/2 cup sugar
- 1/2 cup shortening
- 1 egg
- 1 teaspoon salt
- 5 -1/2 cups flour
Add the sweet potatoes , sugar , shortening , egg , salt and 3 cups of flour , beat .
Add remaining flour to form stiff dough .
Turn onto floured surface , knead until smooth and elastic , about 8 min .
Place in a greased bowl , turn once , cover and let it rise until doubled , about 1 hour .
Punch dough down and give the desired shape . It can be rolls , crescents etc...
Cover and let rise until doubled .
Bake at 375 for about 14 to 16 min.. or until golden brown .
I know most of us would think of Sweet potato rolls for thanksgiving , but in reality you can bake them in any occasion .They are very light and delicious !
